It’s not even summer yet but the our new brownies are making me hungry for brownie sandwiches.
Grab your Rustic Coast Pastries Uber Fudgy Brownies and your favorite ice cream or make an amazing buttercream and lather between the two fudgy layers. Yum, yum, yum!

Salted Caramel Cream Filling
1 Cup Butter
2 Cups Powdered Sugar
Dash of Salt
1/4 Cup Caramel
1. In a large bowl, cream the butter until smooth.
2. Add the powdered sugar & salt and beat until smooth.
3. Add the caramel and beat together until all combined.
Peanut Butter Frosting
1 Cup Smooth Peanut Butter
1 Cup Powdered Sugar
5 TBSP Butter
3/4 tsp Vanilla
Dash of Salt
1/3 Cup Heavy Cream
1. In a large bowl, add all the ingredients in except the heavy cream.
2. Beat for 5 minutes until creamy.
3. Add the heavy cream and beat another 2 minutes.
Espresso Buttercream
Ingredients
1/2 Cup Butter
1 1/2 Cups Powdered Sugar
2 TBSP Espresso Powder
1 tsp Vanilla
1 TBSP Heavy Cream
Pinch of Salt
Beat and cream the butter until smooth, about 3 minutes. Slowly add in the powdered sugar, espresso, vanilla and salt.
Thin with heavy cream if necessary
To Store
Wrap each sandwich individually with plastic wrap and foil. They will harden the longer they sit in the freezer. Pull for a quick snack or for movie night.
