Roasted Garlic

I love garlic! Garlic, also known as “The Stinky Rose.”
Garlic, when roasted, spreads like butter on your toasted Rustic Coast Pastries bread (YUM!). Roasted garlic is also a great addition to many recipes.

How about:
* Add to your favorite marinara or alfredo sauce
* Make roasted garlic mashed potatoes
* Add to soups or stews
* Make roasted garlic butter (See my recipe for Compound Butter)
* Rub on corn on the cob
* Stuff into a juicy steak (chicken or lamb) before baking, roasting or grilling
* Add to good quality olive oil for a fantastic dipping sauce (See my recipe for Dipping Sauces)
* Combine with mayo or mustard for a mouthwatering sandwich or potato salad
The possibilities are endless and delicious

Roasted Garlic

You Will Need

  • 6 - 8 Garlic Bulbs (Elephant Garlic Works Best)

  • 4 TBSP Olive Oil

  • 4 TBSP (1/2 Stick) Butter, Cut Into 6-8 Pieces

  • 1 tsp Fresh Thyme Leaves

  • 1/4 tsp Copped Fresh Rosemary

  • 1/4 tsp Flaky Sea Salt

  • 1/4 tsp Fresh Ground Pepper

  • 3 TBSP Grated Parmesan Cheese (optional)

Instructions
1. Preheat oven to 400 degrees.
2. Using a large sharp knife, cut the top 1/4 inch of the garlic heads off to expose the cloves. Leave the whole heads intact.
3. Place the garlic heads cut sides up, touching one another, in a cast iron skillet. Drizzle with 3 tablespoons of olive oil and top each bulb with a slice of butter. Sprinkle the spices on top of the bulbs.
4. Cover the skillet tightly with foil to keep in the moisture. Place in the oven and roast until the garlic is very soft, usually about 1 hour of roasting. Remove from the oven and remove the foil, carefully. Sprinkle the parmesan cheese on top.
5. Return to the oven and roast uncovered until the tops begin to brown. About 5 - 10 minutes.
6. Drizzle the remaining tablespoon of olive oil over the garlic bulbs. You can serve the heads of garlic in the skillet or transfer to a warmed serving platter and pour any juices over the top.
7. Spread the warm garlic on your favorite Rustic Coast Bread or add to one of the many options listed above.
8. Smile and enjoy.
