Taco Soup
Not only does it contain a lot of flavor, it’s easy to prepare, it’s made with pantry staple items and it’s low calorie…that is, if you don’t add the cheese, sour cream, chips and salsa like I like to do.
Adaptable to your preferences, pantry challenge worthy, cost effective and low calorie so it’s low guilt too :0)
Pair with Rustic Coast Pastry’s bread and it’s a hearty, healthy and warm meal
Ingredients:
1 lb Ground Beef (Or chicken, turkey or pork)
3 Cans Kidney Beans (Drain2 of the cans and include the juice from the 3rd can)
1 Can Corn (Do not drain)
1 15oz Can Tomato Sauce
1 Can Diced Chilies (Small can)
1 Packet of Taco Seasoning*
1 Packet of Ranch Seasoning*
Spices to taste: Salt, pepper, fresh or minced onions, parsley, cumin, red peppers etc
Instructions:
Brown hamburger with preferred seasoning. Drain the fat. In a large bowl combine all the ingredients together.
You can either take all the ingredients and either place them in a crockpot to heat and cook on high for 2 – 3 hours or in a saucepan. Bring to boil, turn to low and simmer for at least 45 minutes. Or simply serve in a bowl and microwave to heat.
Great suggestions: Add grated cheese, salsa (mild/med/hot), sour cream and chips for just a few additions.
*If you don’t have a packet of
Ranch or Taco Seasoning
in your pantry, you can make the spice packets yourself:Ranch Seasoning
2 tsp Salt
4 TBSP Parsley3 tsp Dill Weed
2 tsp Dried Chives
4 tsp Garlic Powder
4 tsp Onion Powder
4 tsp Dried Onion Flakes
2 tsp Black Pepper
(2 TBSP of mix makes 1 Package)
Taco Seasoning
2 TBSP + ½ tsp Chili Powder
1 TBSP + ½ tsp Cumin
2 tsp Crushed Red Peppers
2 tsp Onion Powder
2 tsp Garlic Powder
1 tsp Fine Sea Salt
½ tsp Ground White Pepper (Can Use Black Pepper)
½ tsp Dried Oregano
¼ tsp Cayenne Pepper
