Spaghetti Salad
This is one of my most favorite recipes that I love to share with family, friends and bring to potlucks. It’s easy to prepare, the flavor is fantastic and it’s a crowd pleaser!
When I first saw the recipe and saw the paring of mayo and spaghetti, I was a bit apprehensive about trying the dish. Let me tell you, don’t be intimidated by the mayo and spaghetti combination, the creamy dressing compliments the flavors wonderfully well.
Switch out wheat noodles with gluten-free noodles and make the meal gluten-free for those with gluten sensitivities. Although the recipe is great on it’s own, customize it by adding tomatoes, olives, or other veggies.
Pair with Rustic Coast Pastry’s bread and it’s you’ve got a light lunch or two dinner side dishes! Enjoy!
Ingredients:
1 Box of Spaghetti (Regular or Gluten-free)
8 oz Wishbone Italian Dressing
1 1/2 Cup Mayo
2 TBSP Olive Oil
2 TBSP Wine Vinegar
2 TBSP Parsley (Fresh or Dried)
1 tsp Basil
1 tsp Oregano
3 Bunches of Chopped Green Onions
1 tsp Garlic Powder
Salt & Pepper to taste
Instructions:
Cook pasta according to package instructions
Mix all ingredients together in a large bowl
Pour dressing over pasta and toss lightly
**Prepare 48 hours prior to use (12 is OK too)
Great suggestions: Add cherry tomatoes, olives, cucumber or another of your favorite veggie.
Although good on it’s own, you can also add your choice of meat and/or cheese and make it a creamy pasta salad.Swap out the noodles with gluten-free noodles to share with your gluten sensitive mates!
