Toad In A Hole
I do love poached eggs on top of bread but what I love even more is eggs IN bread. Toad In A Hole is simply toasted bread with an egg cooked in the middle.
There is the British version of Toad In A Hole which is includes sausages baked in a pudding batter, that’s not this! Our American version is a quick and easy breakfast classic that’s super delicious. Not only do kids love it but it’s fantastic for a nice “breakfast in bed” dish.

How To Make:
BREAD: Slice off a piece of your favorite Rustic Coast Pastries bread and slather with butter. Grab a circle cookie cutter that's about 3 inches around. Cut a hole in the middle of your bread. (Remember to save the hole to toast in the pan (Yum!)).
EGG: Melt a tablespoon of butter in a skillet over med heat. After the butter has melted, place the bread slice in the pan. Crack an egg and gently pour into the hole.
COOK: Cook the egg and bread in the pan for about 2 minutes until the bread is just slightly toasted. Flip it all over and cook on the other side until the yolk is almost set and the bread is toasted or the egg is cooked to your liking. Add a little S & P (salt & pepper) and enjoy!
HOLE: Remember to also toast up the hole cutout for an added treat.
Variations:
Add cheese! Toast the bread and add the egg as listed above. Add cheese on top of the egg and then the bread cutout on top of the egg. Toast until the cheese is melted for even more ooey gooey goodness.
Spice it up! Add some heat such as tabasco sauce, sriracha sauce or red peppers.
Optional toppings: Avocado, cilantro, chopped tomatoes, more cheese, salsa, pico de gallo
Skillet! Cook in a non-stick skillet, a well oiled cast iron skillet or an electric skillet.
Baked Toads In A Hole:
Have many mouths to feed at breakfast, bake several Toads at one time:
6 Slices Of Rustic Coast Pastries Bread
1/2 Stick Butter, Softened
6 Eggs
Salt & Pepper
Spray a cookie sheet with non-stick spray or parchment paper
Butter both sides of each bread slice.
Using a cookie cutter, cut out the center of each slice of bread.
Bake in a 375-degree preheated oven for 7 minutes. Pull pan out of the oven and flip all of the bread (even the cutouts).
Pull out of the oven. Add egg yolks to each piece of bread in the cutout hole.
Continue until each piece of bread has an egg "floating around" inside of it.
Place back in the oven (you can add the cutouts on the edges again).
Bake for 9 minutes. If you prefer a firmer yolk, bake for 11 minutes
Remove from oven. Allow to sit for 3-4 minutes and the yolk will deepen in color. The eggs will come back to their beautiful golden color.
Serve with desired toppings and enjoy.
