Blueberry Salsa

Serve with chicken or grilled fish or simply devour with chips. Spice it up a bit by adding some heat such as hot sauce or hot peppers to your liking. Enjoy!

Blueberry Salsa
Ingredients:
  • 1 Cup Fresh Or Frozen Blueberries, Coarsely Chopped
  • 1/2 Red Bell Pepper, Seeded, De-ribbed & Diced

  • 1 (or More) Jalapeno or Serrano Chili

  • 2 TBSP Minced Cilantro

  • 2 Green Onions, White & Green Parts, Finely Chopped

  • Juice 1/2 Lime

  • Pinch of Salt

  • Pinch of Sugar

Instructions:

  • Combine all of the ingredients in a medium bowl and toss well. Refrigerate for 30 minutes before serving. Cover and refrigerate for up to 3 days. Devour & Enjoy!!
    Makes about 1 cup!
